About Tracey Souter
Having spent most of my adult life in Las Vegas learning all about the restaurant/hospitality industry i moved to London in 2005 where i met my wife and when we were lucky enough to have our daughter 2 years later we decided to leave the rat race behind and follow our dream. Tracey is a Westcountry girl so we returned to her roots and fell in love with the rugged countryside and stunning coastline of North Cornwall. We haven't looked back and feel blessed to be able to live in this magical part of the country. We have found the best possible area to fully indulge our passion, food !
Tracey Souter purchased this Cottage in 2010
Why Tracey Souter chose North Hill
The cottage sits adjacent to our home and in gardens of about 3/4 acre. We were drawn to this area for it's peaceful rural location but with easy access to amenities, beaches, rugged countryside walks and the ability to get to a bigger town if the need for retail therapy grabs you ! Bodmin Moor, steeped in history is right on our doorstep. We are also just off the A30 so the perfect location to explore further in to Cornwall or Devon, just across the border !
What makes this Cottage unique
Food is our passion. We grow our own fruit/vegetables and have daily fresh eggs from local chickens. Cornwall provides us with the best seafood/free range meat in the country and we use this to the best of our ability to appeal to our customers in a diverse exciting manner. If you want to have a self catering vacation, that's fine, the kitchen is well equipped with all mod cons. You could choose bed and breakfast and we will prepare a continental or full English breakfast using the best locally sourced produce. Alternatively we can provide occasional catering. Just contact us beforehand to discuss. We are here to make your holiday memorable.

Had the best break away. Tracy and mark are amazing and so is the liberty barn.
Liberty Barn immediately hit all the senses, from the second you opened the door. An exceptional warm greeting met our eyes, nose and ears with all the tasteful Christmas decorations and lights, along with the rip roaring log fire and candles burning away. Classical music was also being played in the background. Truly magical. This was quickly followed by the equally warm welcome received by Tracey and Mark. We were looking for a peaceful, relaxing stay and that is exactly what we got. The break was rounded off perfectly with Mark cooking a Master Chef style meal, including rack of lamb you could suck through a straw and Tracey provided a delicious chocolate fondant. I forgot to mention the welcome basket was also truly amazing,
packed with home made goodies. They are a true team and compliment each other well. I think the most poignant thing to add is that we never go back to the same residence/location twice, because we like to experience something different each time - however, for the first time ever - we have booked a return visit in the summer of 2018!!
Cosy Cottage with hotel luxury
All the luxury you expect from a top Hotel, with everything you need to make yourself at home in the cottage. Very quiet, and we enjoyed having our phones off to just relax. We had some great walks/ trips within an hours drive to beach, dramatic moorland and waterfalls. Next time we need a relaxing break this will be hard to beat.
Stylish coziness personified.
Well, what can I say? My rule of thumb when visiting any b&b/hotel/restaurant has always been, would I go back? The answer yes is depressingly rare, especially when there are so many other places to discover. It is a testament then to the absolute perfection of our stay at Liberty Barn, that I am already planning another visit. I was prepared for the food to be great, but it was faultless. From the perfect breakfasts to the guinea fowl stuffed with the liver and dates in the evening.
However, the real stars of the show are Marky and Tracey themselves. Quite simply two of the most genuinely lovely people I have met in a long time. I felt like I was spending a few days at the house of two great friends and we were completely spoiled, from the delicious welcome hamper to the jars of pickles we were given as we left.
Thank you both for the most wonderful few days, we will be back as soon as we can.
Huge love. X
First things first... if you’re struggling to believe all the rave reviews (as we were), struggle no more! Everything really is as perfect as it sounds. Mark and Tracey have totally succeeded in creating the perfect hideaway. The cottage is gorgeous, cosy, spotlessly clean, warm, well furnished, well equipped. The hot-tub, sauna, snug and fire-pit area is clean and private and made us feel like we were on cloud 9. Marks cooked breakfast delivered to our kitchen table was delicious! Not a baked bean in sight! And that’s because he knows exactly what he’s doing and doesn’t need to add moisture or flavour using a tin. I’ve had a few decent breakfasts in my time, but that one takes first place. We also had the privilege of Marks Mexican.... er... Medley. Everything was so fresh and tasty! Mark explaining how each item/dish was prepared made the experience that much more exciting and special. Well, it’s actually impossible to not get excited when he starts on food... he’s mad for it! And it shows! For dessert Tracey made us a Chocolate Fondant (which DID ooze) with a Raspberry Coulis which finished us off perfectly. We've never stayed somewhere where we’ve felt so welcome and instantly felt like we were staying with friends. We will definitely be back! 10/10 for everything! Thank you so much to you both for making Natalie’s birthday so memorable. See you again soon, Matt and Natalie x
