Istrice is a light-filled apartment on the second floor of the farmhouse and from its windows you can enjoy the beautiful view of the surrounding valleys and hills. Completely renovated, it still maintains old historical features and details like the wood-beamed ceilings and the terracotta (cotto) floors. The living room has a sitting area around the old (working) woodburning fireplace with sofas that sit comfortably 4 people.
There is a big open-kitchen area with table and chairs for 6. The country-style kitchen is new, with : refrigerator, oven, 4 burners, and a dishwasher, so cooking is easy and enjoyable. There is an antique china cabinet the holds plates, glasses, silverware, cups, kitchen utensils, pots and pans as well as table linens and kitchen towels. Il Civettaio is a beautiful farmhouse in an organic winery and olive farm in Maremma,Tuscany. This country villa, dating back to the 1700, has been elegantly restored into 6 apartments, furnished with family antiques and traditional furniture, to maintain intact the feeling of Maremma, Nestled on a hilltop, it commands a stunning view of the countryside. This was the last leg of our Italian vacation. The property was beautiful and wonderfully maintained. The apartment was big enough for four adults. The pool was delightful and the lounge chairs comfortable. We cooked several dinners and there was enough pots/pans, etc. Our time was relaxing but a car is necessary to get around. The drive north to Siena is about an hour but apparently there is a brand new road making it much easier to get there. We sat out on the porch, drank wine and pretty much relaxed. Wednesday we made our own pizzas (with the help of Gregario's cooks) and dined outside. Bring your bug spray for sure.
This property and vacation exceeded our expectations! It was perfect for our family which included 3 children. Gregorio and Alexia were so kind, generous and relaxed - had excellent recommendations for food and sightseeing. Our favorite part of the vacation was the farm tour and cooking class! The apartment had everything we would need and was very clean. We enjoyed visiting local wineries (approx 25 mins away) and local villages as well as venturing out to the beach for a day and to montalcino and San gimignano. I would come back and stay on this property again in the future. The beds were also very comfortable. In the evenings there were optional activities such as pizza making or buffet dinner with a band- again the chef here is wonderful and the food was fabulous! We are sad to be leaving.
We loved our stay at Il Civettaio! The farmhouse is even more beautiful than the pictures. Our two bedroom apartment, the Istrice was on the top floor and had great views and a large living/dining/kitchen area stocked with condiments such as salt, pepper, sugar, coffee, tea, hot water maker, etc.
The highlight of our trip was the farm tour and cooking class at Il Civettaio, which is offered if you request it in advance. We toured the vineyards and olive groves first at 4pm, then tasted the excellent white wine (Vermentino) produced at Il Civettaio with cheese, bread and the Il Civettaio olive oil, which is fantastic also! We typically like red wines, but this white wine and olive oil tasting experience was so good I wished we hadn't saved it for our last day so I could enjoy more of the Vermentino. We then started our cooking class around 5:30pm, prepared fresh pasta, with Lucinda preparing too as she was teaching us, and then Lucinda made a wild boar ragu sauce as we watched and took a few notes. At 7pm we had our best meal in Italy at the farmhouse with the locally produced food and wine from Il Civettaio, eating outside and staying up until the sunset at almost 10pm.
The sunsets and the long days in early June were amazing, and there is so much light that you can really enjoy seeing Tuscany at this time -- when it's not yet so warm. We were very lucky with weather that approached 80s during the day and in the 50s at night with very low humidity. We kept the windows open at night to enjoy the breezes. We did not experience any problems with road noise as one reviewer commented.
We visited the towns of San Gimignano, Siena, Montepulciano, and Montalcino which were all beautiful. San Gimignano was our favorite as it has such historic streets and shops and tunnels to get you under the buildings and to the next street (similar to Siena) but on a much smaller scale. All of the towns have great places to walk around and get lunch and a gelato and shop and people watch. If you are interesting in tastings, Montepulciano was the really only town we visited with merchants offering wine, olive oil and cheese tastings with multiple opportunities on every block, which made us wish we had taken a driver to visit this town. Bring at least 5 Euros in coins for public parking and be prepared to walk at bit both up and down hilly streets to see the towns.
We can't wait to go back, and would definitely stay at Il Civettaio again!
We were 5 women in different ages spending 1 fantastic week at Il Civettaio. It is a beatiful place on a hill with a fantastic overlook at the landscape! You can sit and relax under big trees looking at the sunset, maybe with a glass of really good wine in your hand. In the garden you can pick fresh, sunwarm tomatoes and fresh herbs....From the restaurant you have possibilities to taste good food! The owner gives good advices of what to do in the neighborhood. It is really a good place to stay in, an is placed perfect for going out discovering Toscana. Rental car is necessary, nearest village takes about 30 minutes to walk. The apartments are nice, modern and clean, and the pool are clean and well taken cared of. I can really recommend Il Civettaio for a lovely, relaxing holiday.

We were delighted with the apartment here. It is full of rustic charm and the views are absolutely spectacular. The property was very clean and spacious. The owner and staff couldn't do enough to help and are really nice people. The food provided on 3 nights, the 3 course meal, the pizza's and the buffet, were delicious and the location was ideal for getting around Tuscany. As we were on the road side of the farm house it was a little noisy in the morning but not for long. If I go again I would opt to be on the other side. Overall I would thoroughly recommend this very pleasant holiday destination.
Civettaio is in the center of Maremma Toscana in a strategic position: half an hour to Siena, one and a half to Firenze, close to Montalcino an its wines, half hour to the beautiful beaches of Castiglione della Pescaia, Talamone, Argentario, Roma is two hours train away. And a lot of thinghs to see...
